Hot Greek Yogurt Spinach Artichoke Dip

Today is National Spinach Day and in honor of the 2nd Green Holiday this month I am sharing with you one of my family favorites: Hot Greek Yogurt Spinach Artichoke Dip

You will be delighted when you make this dip with the creamy texture plus you won’t have any of those awkward stringy cheese moments at the table. Another bonus: it is so quick to make with ingredients I typically have on hand – a pleasing appetizer for guests!

Hot Greek Yogurt Spinach Artichoke Dip

8 oz light cream cheese

2 cups nonfat Greek yogurt

1 ½ cups Parmesan cheese

10 oz spinach, fresh or thawed frozen

1 13.75 oz can artichoke quarters, dicedIMG_0108

1 4 oz can diced green chiles

1 4 oz can diced jalapenos (optional)

3 minced garlic cloves

Place cream cheese and yogurt in a medium saucepan over medium heat.  If using fresh spinach chop coarsely. If using frozen spinach squeeze to remove moisture. IMG_0110Stir yogurt mixture then add spinach, artichokes, garlic, green chiles and jalapenos if using (canned jalapenos are too hot for my crowd – I dice a fresh jalapeno or use 2-3 tsp of the canned and freeze the rest for another use). Stir in parmesan cheese.  Cook for 5 minutes or until very hot and bubbly.

Serve with raw vegetables, multigrain chips or really whatever you like. Bon Appétit!
